Washed Coffee: The Wet Process
Washed coffee has its fruit removed and washed off before drying, a method prized for producing a clean, bright, variety-forward cup.
Washed coffee, also called wet-processed coffee, is coffee that has its skin and fruit pulp removed before drying, usually through fermentation and a rinse in clean water. It's the method most associated with a clean, bright cup, and it's also how Jamaica Blue Mountain is traditionally processed.
How Does the Washed Process Work?
Ripe cherries are sorted, then pulped — the skin is stripped off, typically within 24 hours of picking — leaving the bean coated in sticky fruit mucilage. From there, mills either soak the beans in tanks of water for open, or "dry," fermentation that can run up to about 72 hours, or ferment them fully submerged, a method often described as producing a juicier, finer acidity than mechanical demucilaging does. Fermentation time depends on temperature, altitude and how thick the mucilage is, and mills generally stop it once the mucilage has broken down enough to rinse away in clean water.
After washing, the parchment-covered beans are dried, either mechanically in about 18 to 36 hours or spread on patios, raised beds or in parabolic dryers for roughly 7 to 15 days, with regular turning to dry evenly before hulling.
Where Is Washed Coffee Common?
Washed processing is the primary method across most of Africa and through Central and South America outside Brazil, along with parts of Asia-Pacific. It's the standard approach in Kenya, Colombia, Guatemala and Costa Rica, and it's also widely used in Peru and Ecuador. Brazil is the major exception: most Brazilian arabica is dried as whole fruit instead, so a lot of Brazilian coffee never sees a washing tank at all.
How Does Washing Change the Cup?
Washed coffees are often described as clean and articulate, with a wide range of possible fruit acidity depending on variety and elevation, sometimes bright and crisp, sometimes closer to a caramel or sugary sweetness. Because the fruit is removed early, the flavor of the pulp itself has little chance to seep into the bean, so what comes through in the cup tends to read more as the variety and terroir than as the fruit that once surrounded it. That's part of why washed coffee is often used as a baseline for comparing origins — it tends to show a farm's underlying character with less processing noise layered on top, though drying quality still matters enormously.
What Are the Pros and Cons of Washed Processing?
Industry trade groups have called washed processing the most common of the major methods and often the one most likely to produce the highest quality, in part because pulling the fruit off early limits the risk of over-fermentation reaching the bean itself. It also tends to produce more visually uniform green coffee, which can make sorting and grading easier.
The tradeoff is water and labor. Conventional wet mills can use anywhere from about 20 to 100 cubic meters of water per tonne of green coffee produced, and that wastewater carries a heavy organic load that has to be managed responsibly rather than let into streams untreated. Washing also adds equipment, tank space and skilled labor that dry processing doesn't require, which is one reason it's rarely used in places without reliable water access.

How Does Washed Coffee Compare With Jamaica Blue Mountain?
Jamaica Blue Mountain is itself traditionally a washed coffee, so in that narrow sense it sits in the same family as a Kenyan or Costa Rican washed lot. But processing method alone doesn't explain why JBM is widely described as mild and balanced with low bitterness — that reputation is generally credited more to its elevation and its Typica variety than to washing itself, since plenty of other washed coffees taste bright and bold rather than gentle. The fairest comparison, then, isn't washed-versus-washed but recognizing that JBM uses the same clean-processing logic as much of the world's specialty coffee, layered onto growing conditions that push its cup toward smoothness rather than intensity.
